I participated in a sake tasting experience at Wakabayashi Brewery with a friend. Round tables lined the quaint Japanese-style room, and a wide selection of sake with stylish labels. It was a truly wonderful space. The sake tasting was based on choosing five sakes from nine varieties. I was thrilled to find my favorite, with its vibrant, tangy flavor! I also learned how much flavor can vary, even within the same brewery. The Fuji apple juice they sell here is also surprisingly delicious. The current owner is the fifth generation, having returned to his hometown from Tokyo to take over the brewery. After hearing his thoughts, the sake I enjoyed was exceptional. There are also materials in English, so I think overseas visitors will also enjoy it. This is a wonderful brewery that alcohol lovers should definitely visit!

"I was able to sit down and listen to the master brewer talk about sake brewing in a relaxed atmosphere, and I was able to learn about sake in a comfortable setting. Being able to choose from five different types of alcohol was appealing.
After the brewer's master brewer gave us a clear explanation of the sake-making process, it was time for tasting. There were a whopping nine types of sake on display. The appealing thing was being able to choose five of them for myself. Even though it was summer, four of the types were unfiltered, which excited me as a fan of unpasteurized sake. After familiarizing my palate with the basics of Tsukiyoshino sake with the classic and best-selling "Dry Junmai Aka," I savored the four types to my heart's content. The one that particularly impressed me was the "Junmai Ginjo Midori Yamakei Nishiki," which had a good balance of sweetness and acidity and an excellent finish. I bought some on my way home. The remaining three sakes also had sophisticated flavors, and I realized Tsukiyoshi's fan base is growing. I'll definitely return in a different season!
