Non-alcoholic Amazake
We use 100% Miyama Nishiki sake rice and polish it to 59%, which is the ginjo standard. The ones with fruits are blended with fruits from Shinshu Ueda.
We also have amazake made with fermented lactic acid bacteria.
Sake lees
Sake lees, a traditional Japanese fermented food, has surprising health benefits. It is also a treasure trove of nutrients and flavor, including B vitamins and amino acids. Wakabayashi Brewery's sake lees are made with a slightly higher lees ratio than usual, resulting in a moist and luxurious sake lees.
